Day 24 – Healthy Living 30 Day Challenge
Welcome to Day 24 of my Healthy Living 30 Day Challenge, created to support my Yoganudge Facebook group
If you’re a member of my Facebook group, I hope you downloaded my self-study tutorial 21 Days of Yoga (which is free for my FB group members) and have started a regular yoga practice in the comfort of your own home.
Here’s today’s healthy living tip:
Eat more salads. Green, leafy salads are the best choice, but any healthy salad is good. Try to eat some kind of salad every day.
Don’t like green, leafy salads?
Try this Cucumber, Tomato, and Feta Salad instead.
You’ll need:
2 medium cucumbers, peeled and chopped
2 cups roma or cherry tomatoes, chopped
1/2 red onion, chopped
1/4 teaspoon black pepper
sea salt to taste
4 oz feta cheese
1/2 cup assorted pitted olives, halves
2 tablespoons white balsamic vinegar
1 tablespoon Extra-Virgin Olive Oil
1/2 teaspoon Dijon Mustard
2 tablespoons fresh Dill
Instructions:
In a large salad bowl add cucumbers, tomatoes, onion, feta olives and season with salt and pepper.
Whisk together the remaining ingredients and pour over cucumber tomato mix, toss to coat.
Garnish with dill.
Serve immediately.

Good reminder Suzanne. I like a green leafy salad and then I like to add boiled egg, cucumber, onion, crispy red peppers and I usually put a few croutons on top. My favorite salad dressing right now is Jalapeno Ranch which I know is not that healthy but if salad is all I’m having, I want some good dressing! 🙂
After I wrote that post this morning I actually had a green salad for breakfast. Maybe I just need to write about healthy food every day, huh?
